Step 1: Preheat

  1. Preheat oven to 400°F (200°C)Line a baking tray.

Step 2: Mix dry ingredients

  1. In a bowl, whisk flour, sugar, baking powder, and salt. Add cold butter and rub into the flour until crumbly with small chunks.👉 This is what makes flaky layers.

Step 3: Mix wet ingredients

  1. In another bowl:
  2. Whisk qushta + milk until smooth
  3. Add egg + vanilla

Step 4: Combine

  1. Pour wet into dry. Gently mix, just until it comes together. Your dough should feel sticky, if it's dry, your scones are gonna be dry. Fold in your dates + pistachios (if using).👉 Dough should be soft and slightly sticky—not dry.

Step5: Shape

  1. Turn onto a floured surface.Pat into a 1-inch thick rectangle or circle. Cut into 10–12 squares or wedges.
  2. Put scones in fridge for 15 minutes👉 Helps them rise taller and stay tender

Step 6: Brush & bake

  1. Brush tops with milk or a little qushta then bake for 15–20 minutes until golden.

Key Success Tips

  1. Keep butter cold
  2. Don’t over mix (biggest mistake)
  3. Dough should feel a bit sticky (dry dough = dry scones)
  4. Chill before baking = better texture

Serving idea

Serve warm with:
