Ingredients

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking tray with parchment paper.
  2. Whip egg whites on low speed until foamy, then increase to medium-high and beat to soft peaks.
  3. Mix sugar, cornstarch, and vinegar together. Gradually add to the egg whites, 1 tablespoon at a time, beating until glossy and stiff.
  4. Continue mixing for 2 more minutes.
  5. Shape into an 8-inch round on the prepared tray, creating a slight well in the center.
  6. Reduce oven temperature to 250°F (125°C) and bake for 1 hour 30 minutes.
  7. Turn off the oven and leave the Pavlova inside for 3 hours (or overnight) to dry completely.
  8. Top with whipped cream, mangoes, blueberries, and raspberries before serving.
