Description

An authentic, rich, and traditional Punjabi Chinioti Kunna Gosht featuring tender bone-in beef chunks simmered with freshly ground aromatic spices, browned onions, and thickened with a roasted flour (atta) slurry, traditionally slow-cooked in a clay pot.

Ingredients

Main Ingredient:

For the Kunna Masala (Freshly Ground):

For the Gravy Base:

For Thickening (Slurry):

For Garnish:

Instructions

  1. Roast & Grind Spices: Dry-roast the whole Kunna spices (coriander, cumin, peppercorns, fennel, cardamoms, cloves, cinnamon, star anise) in a pan until aromatic, then grind into a fine powder. Keep the black cumin (kala jeera) separate.
  2. Sauté Meat & Aromatics: Heat oil/ghee in a large pot or pressure cooker. Add sliced onions (or fried onions) and ginger-garlic paste, sautéing until fragrant. Add the large chunks of beef/mutton and sear well.
  3. Add Spices & Cook: Stir in salt, red chilli powder, turmeric, coriander powder, and Kashmiri red chilli powder along with the freshly ground Kunna masala. Sauté the meat thoroughly for 10-15 minutes until oil separates.
  4. Tenderize: Add adequate water, cover, and pressure cook (or slow cook in a traditional earthenware matka/pot for 3-4 hours) until the meat is extremely tender and practically melting off the bone.
  5. Thicken with Roasted Flour Slurry: In a separate pan, dry-roast whole wheat flour (atta) until golden and fragrant, then mix with a little water to form a lump-free slurry. Pour the slurry slowly into the simmering kunna gravy while stirring constantly to achieve a velvety, traditional consistency.
  6. Simmer & Temper: Let the kunna simmer on low heat for 10-15 minutes. Finish with a light dusting of roasted black cumin (kala jeera) powder.
  7. Serve: Serve piping hot with Khamiri Roti or Naan!

Note

Dry-roasting the whole spices from scratch and grinding them fresh is what gives Chinioti Kunna its signature deeply aromatic restaurant-quality flavor.

Traditional Kunna uses roasted wheat flour (atta) slurry rather than yogurt or heavy cream to thicken the rich, glossy meat broth.
