Chicken & Marinade

For Frying & Tempering

Instructions

  1. Mix the chicken with yogurt, ginger-garlic paste, chilli powder, turmeric, garam masala, coriander powder, cumin powder, lemon juice, salt, and egg.
  2. Add the cornflour and rice flour and mix until every piece is well coated. The coating should be thick enough to cling to the chicken.
  3. Cover and marinate for at least 30 minutes. For deeper flavour, refrigerate for 2–4 hours.
  4. Heat oil to about 175–180°C / 350°F. Fry the chicken in batches so the oil temperature doesn't drop.
  5. Fry for about 5–7 minutes, until deep golden and cooked through. Drain on a wire rack or paper towel.
  6. For the tempering, heat about 1 tbsp oil in a pan. Add the mustard seeds, if using, curry leaves, green chillies, and sliced garlic. Fry briefly until fragrant.
  7. Add the fried chicken and toss everything together for 1–2 minutes.
  8. Finish with fresh coriander and a squeeze of lemon. Serve with lemon wedges.
