Achaari Gobhi
Description
A flavorful, spicy, and tangy dry cauliflower curry infused with traditional achari (pickling) spices, kalonji, fennel, and mixed pickle pieces, served best with hot buttered parathas.
Ingredients
Instructions
-
Soak the cauliflower florets in water briefly to clean them thoroughly, then drain.
-
Heat cooking oil in a pan, add sliced onions along with kalonji and cumin seeds, and sauté until translucent/light golden.
-
Stir in the ginger-garlic paste and cook until fragrant and oil begins to separate.
-
Add the chopped (or blended) tomatoes, red chilli powder, turmeric powder, and salt, cooking until the tomatoes soften into a smooth masala base.
-
Add the cauliflower florets and a slit green chilli, tossing gently to coat them with the masala. (Add just 1-2 tablespoons of water if needed, but avoid excess water since cauliflower releases its own moisture).
-
Cover and cook on medium-low heat for 15 to 20 minutes until the cauliflower is tender yet firm (do not overcook into a mash).
-
Remove the lid and cook on high heat for a few minutes to evaporate any remaining moisture so the dish remains dry and well-roasted.
-
Stir in the chopped mixed pickle pieces along with the final spice blend (roasted crushed cumin-coriander, black pepper, and garam masala).
-
Garnish generously with fresh coriander, green chillies, and plenty of julienned fresh ginger.
-
Cover with a lid and let it simmer on low heat (dam) for 5-10 minutes before serving hot with fresh parathas.
Note
- Keep the cauliflower florets in distinct, medium-sized pieces and handle them gently so they don't break down into mush during cooking.
- Adding julienned fresh ginger at the end gives this achari dish its signature restaurant-style kick and aroma.
