Ingredients
    Chicken Tikka Filling
  • 500 g boneless chicken, finely chopped/minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp chili flakes (optional)
  • 1 tsp ginger-garlic paste
  • ½ tsp red food color (optional)
  • 1 tsp lemon juice
  • 2 tbsp oil
  • 1 tbsp tikka masala powder
  • 1 tbsp chili-garlic ketchup
    • Chicken Buns
  • 6 cups flour
  • 2 tbsp dry yeast
  • 2 tbsp sugar
  • 1 ½ cups warm milk
  • 1 egg
  • 3 tsp salt
  • Chicken tikka filling (1 tbsp per bun)
Instructions
    Chicken Tikka Filling:

    1. Mix chicken with all spices, lemon, oil; marinate 30–60 min.

    2. Cook in pan until fully done and slightly dry (~8–10 min).

    3. Add chili-garlic ketchup; cook 1–2 min.

    1. Activate yeast in milk + sugar; wait 5–10 min.

    2. Mix flour + salt; add egg + milk-yeast; knead 8–10 min.

    3. First rise: Cover 45–60 min until doubled.

    4. Divide dough into 24 portions (~50 g each). Flatten, fill 1 tbsp chicken, seal into buns.

    6. Brush with egg wash; bake 180°C (356°F) 15–18 min until golden.
