Description

Tender and juicy meat pieces marinated in a rich blend of yogurt, lemon juice, and aromatic spices. Grilled to smoky perfection over hot coals and brushed with ghee or oil, this classic barbecue favorite is bursting with flavor.

Ingredients
  • 1 -1.5 kg chicken/ mutton/ beef pieces
  • 2 tbsp raw papaya paste (If using mutton or beef)
  • 1 tbsp salt
  • 1 tbsp heaped red chilli powder
  • 1/2 tsp turmeric
  • 1 tsp whole spice powder
  • 1 tsp Dry roasted cumin crushed
  • 1 tbsp black pepper
  • 1 tbsp coriander powder
  • 1 tsp carom seeds
  • 1 tbsp chat Masala
  • 1 tbsp crushed chilli flakes
  • 1 tbsp Kashmiri Chilli powder (not spicy, adds colour)
  • 1/2 tsp red/ orange food colour
  • 1/2 cup lemon juice
  • 1 cup yogurt
  • 2 tbsp garlic paste
  • 2 tbsp ginger paste
  • Oil/ ghee to brush chicken
Instructions

    Make cuts on chicken pieces (If using meat or beef, apply raw papaya and keep aside for atleast 30 minutes. Then start with other ingredients).

    Marinate chicken with all spices in the list.

    Add yogurt , lemon juice & ginger garlic paste .

    Marinate for 6-8 hours.

    Barbecue meat on a grill.

    On every turn, apply ghee/ oil with brush.

    When done, squeeze lemon juice and garnish with salad.
