Description

An authentic, fragrant, and restaurant-style Kabuli Afghani Pulao made with tender beef stock, aromatic whole spices, long-grain rice, a secret tea-bag colour hack, black lime, and topped with caramelized julienned carrots and sweet brown raisins.

Instructions

  1. In an Instant Pot (or pressure cooker), combine beef chunks, whole garlic bulb, all whole spices, salt, garam masala, and 2.5 cups of water. Pressure cook on high for 13 minutes (or until tender).
  2. Release pressure, squish the cooked garlic so its rich flavor blends into the stock, strain out and discard the whole spices, and separate the tender meat pieces from the stock.
  3. Switch the Instant Pot to "Sauté" mode, heat 1/2 cup oil, and slice onions until dark golden brown (be careful not to burn).
  4. Add a cup of water and a tea bag to the browned onions for 3-4 minutes to impart the signature rich Afghani pulao color, then remove the tea bag.
  5. Add the black lime (poked with a hole), cooked beef pieces, and 1/2 cup yogurt, sautéing until the oil separates.
  6. Remove the meat pieces temporarily, then add the soaked basmati rice directly into the pot along with the strained meat stock and extra water (maintaining a ratio of 3.5 cups liquid for 2.5 cups rice, or using the finger-joint rule). Add the meat back on top.
  7. Secure the lid and pressure cook on high for 6 minutes. Let pressure release naturally.
  8. In a separate pan, heat ghee and fry the julienned carrots for 1-2 minutes, then remove and fry the brown raisins for 1 minute until plump.
  9. Garnish the fluffy Afghani Pulao with the caramelized carrots and raisins, cover, and let it rest on low heat (dum) for 5-10 minutes before serving hot!

Note

Using a tea bag briefly in the onion stock gives the rice its authentic traditional brown color without altering the savory flavor.

Adding black lime (loomi) introduces an authentic, subtle tangy depth characteristic of Middle Eastern and Afghan rice dishes.
