Step 1: Prep the chicken:

  1. Season the chicken with salt and pepper. Toss in cornstarch (and flour if using) until evenly coated.

Step 2: Fry the chicken:

  1. Heat oil in a pan over medium-high heat (enough to shallow fry). Fry chicken pieces until golden and crispy, about 4–5 minutes per side depending on size. Drain on paper towels.

Step 3: Make the sauce:

  1. In a separate pan, sauté garlic (and ginger if using) for 30 seconds. Add orange juice, orange zest, lemon juice, soy sauce, and sugar/honey. Bring to a simmer, then stir in the cornstarch slurry. Cook until sauce thickens, about 1–2 minutes.

Step 4: Combine:

  1. Toss the fried chicken in the sauce until fully coated. MAke sure that the chicken is properly coated in the sauce.

Step 5: Serve

  1. Serve immediately over rice or noodles. Optional: garnish with extra orange zest, sesame seeds, or chopped green onions.

Note

Tips:

If you want your chicken to be extra crispy: Don’t overcrowd the pan while frying. Fry in batches if needed. For an extra crunch, double-coat: dip chicken in cornstarch, then a tiny splash of water or egg, then cornstarch again.
