Description

A rich, ultra-moist, and famous Spanish-style tres leches cake infused with three types of milk and topped with smooth whipped cream and a luscious homemade mango puree. This decadent dessert is best served chilled for a refreshing and indulgent treat.

Ingredients

Instructions

  1. Separate egg yolks and egg whites into two different bowls ensuring everything is at room temperature.
  2. Beat the egg yolks with a portion of the sugar until creamy, pale, and thick.
  3. Sift in the flour, baking powder, a pinch of salt, and vanilla essence into the yolk mixture, mixing gently with a spatula or low-speed mixer without overmixing.
  4. In a clean, dry bowl, beat the egg whites while gradually adding the remaining sugar until stiff peaks form.
  5. Gently and gradually fold the whipped egg whites into the yolk and flour batter using a spatula in an upward folding motion to keep the sponge light and airy.
  6. Pour the batter into a greased baking pan and bake in a preheated oven at 350°F (180°C) for about 30-35 minutes until the sponge is fully baked.
  7. Allow the baked sponge cake to cool completely, then invert it and poke numerous holes all over the top using a skewer or fork.
  8. Prepare the three-milk mixture by combining fresh milk, condensed milk, and evaporated milk.
  9. Pour the milk mixture gradually over the poked sponge cake, allowing it to absorb fully, then refrigerate for at least 8 hours or overnight.
  10. Whip the fresh cream with a little sugar until soft peaks form, then spread it evenly over the chilled soaked cake.
  11. Prepare the mango puree by blending peeled mango cubes with a little condensed milk, simmering gently on low heat until thickened slightly, and adding a touch of yellow food color if needed.
  12. Decorate the chilled cake with the prepared mango puree and fresh mango slices before slicing and serving.

Note

Ensure the eggs are separated and whipped individually to build the essential airy sponge structure required to absorb the three milks properly.

Refrigerate the milk-soaked cake for at least 8 hours or overnight so the cake absorbs all the liquid thoroughly and sets perfectly before adding the cream and mango topping.
