Instructions

  1. Line an 8"x4" loaf pan with parchment paper.
  2. Place it inside a larger baking dish.
  3. Add hot water halfway up the sides to create a steam bath.
  4. Beat the cream cheese and sugar until smooth.
  5. Mix in the vanilla.
  6. Add the eggs one at a time, mixing gently.
  7. Pour in the whipping cream and mix until smooth.
  8. Sift in the flour and fold until combined.
  9. Pour the batter into the prepared pan.
  10. Bake at 220°C (428°F) for 30 minutes.
  11. Check that the edges are set and the center is jiggly. Bake for an additional 5–10 minutes if you prefer a firmer cheesecake.
  12. Cool at room temperature, then refrigerate for at least 4 hours, preferably overnight.
  13. For the chocolate custard topping, heat the cream, milk, sugar, and salt until steaming.
  14. Whisk the egg yolks in a bowl.
  15. Slowly pour the hot mixture into the yolks, whisking constantly to temper them.
  16. Return the mixture to the heat and cook until slightly thickened.
  17. Pour over the chopped chocolate and stir until smooth.
