Description

An authentic Pakistani style pulao where beef is simmered with whole spices to create a flavorful broth (yakhni), then cooked with Basmati rice.

  1. Make the Broth: Add beef, water, quartered onion, garlic, ginger, fennel seeds, coriander seeds, and salt to a pot.
  2. Bring to a boil, then simmer on low heat for 45 minutes until the beef is tender.
  3. Strain: Separate the cooked beef pieces from the broth. Strain the broth into a bowl and discard the leftover whole spices, onions, and garlic.
  4. Measure the broth (you need about 3.5 cups; add water if short).
  5. Fry the Onions: Heat oil in a large pot. Add sliced onions and whole spices. Fry until the onions turn golden brown.
